The mouth-watering name of this squash identifies it as the Delicata strain developed by Oregon plant breeder Carol Deppe, who selected for thick flesh, rich flavor, long storage capacity, and vigorous growth – thank you Carol. Halved and baked, they’re the perfect individual serving size. Eat the skin too, it’s very thin and tasty.

Culture: Plant seeds outdoors at around the time of your last expected frost. Full sun, and they enjoy having something to climb on.

Saving Seed: Delicata will happily cross with all other Cucurbita pepo squash – that’s most summer squash, many pumpkins, and some other winter squash such as acorn and spaghetti – and the results are not welcome at the table. An isolation distance of ½ mile is necessary. Or you can hand-pollinate. Let the best fruits from a minimum of 10 plants mature to their full size and hardness. After harvest, wait a month for the seed to fully ripen before extracting it. Air dry until a hammer blow will shatter a seed rather than squishing it.
